Christophe Michalak is one of the most recognized leaders of his pastry world. He is World Pastry Champion, TV star, author, consultant, demonstrator, owns multiple patisseries in Paris and a ‘Masterclass’ education facility for students to learn from the man himself.
Christophe rarely judges competitions, so Savour Patissier of the Year is very fortunate to have secured his expert knowledge to judge the products that will be presented at the event.
He recently answered a few questions for us in the lead up to the 2017 competition:
How did you become involved with the Savour Patissier of the Year competition?
Thanks to Kirsten Tibballs, I’ve been following her in Instagram for a while now and I love her work.
Why did you want to be a judge at the event?
I think that Australia has taken a giant leap in the pastry world, and I want to be present to see that with my own eyes.
What are your thoughts on Australian patisserie products?
I am a fan. I love Adriano Zumbo in Sydney, and have heard about Lune Bakery and Cacao Fine Chocolate & Patisserie, and I want to try them.
What are you most looking forward to judging: eclairs, plated dessert, entremets or tarts?
Everything, I am curious, and I look for strong emotions, sugar is my drug!!!
What are you looking for from the competitors? What does it take for a dish to truly wow you?
I look for the ultimate flavor, but with simplicity and personality of the chef, all of this is important to me.
What is more important: innovation, flavour, or the look of the dish?
All 3 of them are important. A dessert is like a good song or a great movie, one has to get lost, travel, dream about tasting a good cake…like the feeling La La Land (2017 Oscar winning film) gave me in the theater.
What are looking forward to seeing while you are in Australia?
Discovering Melbourne, I’ve never been there, taking a good amount of sunshine, of smiles and of Australian contacts.
Anything else you would like to add?
I hope not to gain 3 Kilos when I come back.
